La col de Brunswick es una excelente variedad de invierno de final de temporada. Se introdujo por primera vez en Alemania en 1924 y es una variedad ancestral que se ha cultivado en huertos familiares desde entonces. Produce cabezas grandes de 3 a 4 kg (6 a 9 lb) en forma de tambor, densas y firmes. Es una col de sabor exquisito, lo que la convierte en una excelente opción para sopas, guisos, chucrut y ensalada de col. Madura en unos 90 días, es resistente al frío y tolerante a la sequía. Se conserva bien durante períodos prolongados.
