    Bean 'French Horticultural' (Phaseolus vulgaris), often known as Dwarf Horticultural or Speckled Cranberry, is a historic open-pollinated heirloom prized for its versatile dual-purpose harvests and striking colorful pods. Growing into compact, sturdy bushes 18 to 24 inches tall, it produces heavy clusters of 5- to 6-inch pods. Early in the season, young flat green pods can be harvested as fresh snap beans. As they mature, the pods turn a stunning cream color heavily splashed with deep red-carmine streaks. Inside, the plump, oval beans feature a matching red-and-tan speckled pattern, offering a rich, chestnut-like flavor and buttery texture ideal for fresh shell bean dishes, slow-cooked soups, and long-term winter dry storage.
