Daikon Radish (Raphanus sativus var. longipinnatus) is a classic Asian heirloom prized for its extra-large, snow-white roots and crisp, mild flavor. Producing cylindrical roots that grow up to 12–18 inches long, it offers a crunchy texture with a subtle, refreshing peppery finish that is far milder than small red radishes. Outstanding for fresh slicing, pickling (such as takuan or kimchi), spiralizing, and stir-fries, this fast-growing root also serves as a fantastic deep-tillage cover crop to break up compacted soil.
