Description

Squash 'Butternut Waltham' (Cucurbita moschata), an open-pollinated heirloom developed in 1970 by the Waltham Field Station, is the gold standard of winter squashes. Growing on vigorous, sprawling vines 8 to 12 feet long, it produces uniform, bell-shaped fruits weighing 4 to 6 pounds with smooth, tan-to-buff outer skins. The deep orange interior flesh is remarkably smooth, sweet, and nutty, containing a small seed cavity localized in the bulbous base. Exceptionally resistant to vine borers due to its solid stems, Waltham Butternut holds its high quality for months in cold storage, making it perfect for roasting, pureeing into rich autumn soups, baking, and winter pies.
