Squash 'White Bush Scallop' (Cucurbita pepo), also known as Pattypan or Cymling, is a historic open-pollinated heirloom summer squash cultivated by Native American tribes and documented since the 16th century. Growing into a productive, non-vining bush 2 to 3 feet tall, it yields unique flat, disc-shaped fruits with deeply scalloped edges. The smooth, pale ivory-white skin encases fine-textured, tender white flesh with a delicate, buttery flavor profile. Harvested young at 2 to 4 inches across, White Bush Scallop is exceptional for whole roasting, grilling, stuffing, or sautéing.
