Thyme (Thymus vulgaris), often known as English or Winter Thyme, is a quintessential heirloom perennial herb prized for its rich, earthy fragrance and essential culinary versatility. Forming low-growing, woody-stemmed mounds reaching 6 to 12 inches in height, it features tiny, aromatic, grey-green leaves packed with flavorful essential oils. Highly drought-tolerant and hardy, thyme yields continuous harvests of fresh sprigs throughout spring, summer, and autumn, and remains semi-evergreen through mild winters.
