Bok Choy (Brassica rapa subsp. chinensis), also known as Pak Choi or Chinese White Cabbage, is a classic heirloom Asian green celebrated for its glossy, dark green leaves and crisp, juicy white stalks. Forming upright, vase-shaped heads, it delivers a mild, sweet, slightly mustard-like flavor with a satisfying crunch. Extremely fast-growing and cool-hardy, it is an essential staple for quick stir-fries, steaming, fresh salad greens, kimchi, and traditional noodle soups.

Bok choy only takes 45 days to reach maturity, so you can enjoy your leafy greens relatively quickly after planting them. Harvest the bok choy before the hot weather sets in, because the hot weather will make the bok choy go to seed very fast. Bok choy is ready to harvest when it reaches 12 to 18 inches tall.
